Billie’s Grilled Cheese is a Specialty Grilled Cheese food trailer based out of York, NE that travels throughout South Central Nebraska using local cheese and meats to create one-of-a-kind sandwiches. WHO WE ARE

Billie’s Grilled Cheese started in April of 2023. The owner/operator, Derek Dauel, had always wanted to own his own business and decided to start Billie’s Grilled Cheese after years of developing ideas. Billie’s Grilled Cheese is named after his dog, Billie. She is a basset hound and collie mix who Derek found at York Adopt A Pet. Billie serves as the company’s Chief Barketing Officer. 

During his professional career in York, Derek worked for the local economic development organization so he knew he wanted to used local producers and services as much as possible. Jisa Farmstead Cheese supplies all seven cheese flavors, McLean Beef provides ground beef, Smoked Brisket & Smoked Pulled Pork, and Henderson Meat Processors supplies with Bacon, Ham, and Pork Sausage. He also has business relationships with Cornerstone Bank, Jones Insurance, Sapp Bros Petroleum, V2 Marketing and uses as many other local businesses for supplies for the food trailer and maintaining the trailer.
